Sometimes only a Hollandaise will do. Am I alone in thinking this? My mother used to make the most fabulous Hollandaise before my dad embarked on all sorts of weird diets in order to live forever, (he’s currently at 87-ish), and butter was banned. Then most of the rest of all edible foods.
I have tried and failed many times with Hollandaise but have now cracked it, thanks to good old Delia Smith! It felt strange to pull an actual cookbook off the shelf, rather than call up a recipe off the internet, but I think I might start doing this more often.
