I have arrived at the decision that tinned tomatoes ruin any dish you put them in. I had thought it was me but in fact: it’s the tomatoes. I have watched my husband make tomato sauce from scratch for a dish and thought it looked unnecessary and fussy but then I did it myself and - are you still with me? - I am never going to use tinned tomatoes ever again!

Stop, wait! Don’t go! Making your own tomato sauce is very easy and it will take whatever you’re cooking out of the bounds of your own kitchen. It will do that magical thing, it will make your cooking taste like someone else made it.
