Summer, with its endless transit and strange places, so often leads to eating badly. I dwell possibly more often than necessary on the fact that I seem to spend all year fasting and eating kale and doing my 10,000 steps to offset the damage done by both summer and Christmas.
And I’m not only talking about weight gain! I’m talking about just general health. A diet of neat cornish pasties and pizza and burgers will make you fat, sure, but it will also turn your insides to slurry.
I love this red rice salad, which is about as good for your gut health as you can get. I have to make it sparingly so that I don’t get sick of it. It’s one of those recipes that is completely flexible, you can add things in and take them away as you have them in stock.
